Homemade Pasta Tutorial

Homemade pasta is one of life’s simplest culinary pleasures. Three ingredients are all you need — flour, eggs and salt. That’s it. It never ceases to amaze me every time I make homemade pasta how those three little ingredients combine and transform to produce such deliciousness.

While you can absolutely make homemade pasta by hand, it’s much simpler with the help of your KitchenAid® Stand Mixer and Pasta Roller & Cutter Set. You’ll be on your way to enjoying fresh homemade pasta in less than an hour (30 minutes of that is time that the dough is spent resting). Remember that homemade pasta cooks much faster than dried boxed pastas so don’t step away when it’s time to cook it or you’ll end up ruining all your hard work.

You can find “00” flour in specialty markets or you can order it online.

You’ll want to have everything ready and set up in front of you before getting started. Into the bowl of your Stand Mixer, add flour and create a well. Start with 3 eggs. Crack eggs into the center of the flour well and add salt. Using the flat beater attachment, mix until combined. (NOTE: If mixture is too “wet” add more flour until a dough consistency forms. If mixture is too “dry” add another egg.)

Remove the flat beater attachment and attach the dough hook. Mix until the dough forms a ball.

Remove the dough ball from the Stand Mixer and wrap it with plastic wrap. Transfer the wrapped dough to the refrigerator to chill for approximately 30 minutes.

Using a sharp knife, or pastry bench scraper, cut the dough ball into four equal portions. Place one piece of dough next to the Stand Mixer and return the remaining portions to the refrigerator until ready for use.

Attach the KitchenAid® Pasta Roller to the Stand Mixer and set the knob to setting 1. Sprinkle with a small amount of flour.

Press the dough ball onto a clean floured surface until flat. Then run the flat dough through the Pasta Roller attachment. Adjust the Pasta Roller to setting 2. Run the pasta through again for a slightly thinner sheet of dough. Continue with this pattern, adjusting the setting each time until your pasta is as thin as you’d like it. This will take several passes. Repeat this same process with the remaining balls of pasta dough.

Remove the Pasta Roller attachment and attach the Spaghetti Cutter. Carefully run the thinned pasta sheet through. Transfer your fresh spaghetti to a baking sheet lightly sprinkled with flour until you’re ready to cook it. Continue with the remaining pasta sheets.

The fresh pasta can be cooked immediately in a pot of salted boiling water for about 3-5 minutes. Feel free to pair the pasta with your favorite homemade spaghetti sauce. Homemade Pasta

Makes 4 servings

 

INGREDIENTS


2 3/4 cups “00” flour (plus additional for dusting)
3-4 eggs
Pinch kosher salt

DIRECTIONS


Place flour, 3 eggs and salt into the bowl of your KitchenAid® Stand Mixer. Using flat beater attachment, mix until combined. (NOTE: If mixture is too “wet” add more flour until a dough consistency forms. If mixture is too “dry” add another egg.)

Continue with this pattern, adjusting the setting each time until your pasta is thin. This will take several passes. Continue the process with remaining pasta balls.

Remove Pasta Roller attachment and attach the Spaghetti Cutter. Carefully run the pasta sheet through. Transfer your fresh spaghetti to a baking sheet lightly sprinkled with flour until ready to cook.

Continue with remaining pasta sheets.

The fresh pasta should be cooked immediately in a pot of salted boiling water for about 3-5 minutes.
