School is back in session, and for my family that means everyone is home to gather around the table for dinner. This also means I have to create more meals that suit everyone’s tastes. Thankfully, I don’t have a picky family, which means I can be as creative as I want to be. Inspired by the adventurous food truck scene that gives common food a visionary twist, we have created the Falafel Waffle to bring a bit of whimsy to the table.
That’s right; I said falafel waffle — a fun and delightful spin on dinner that combines the traditional batter and flavours of a falafel with everyone’s favourite breakfast treat, waffles. Not only are we bringing an enjoyable meal to the table but we are serving a healthy one by using our KitchenAid® Waffle Baker to skip out on the heavy-calorie frying method of traditional falafels.
Make dinner entertaining and enticing tonight! Savoury crisp waffles, with a blend of chickpeas, fresh herbs, and exquisite spices get topped with a cooling tzatziki sauce and are the perfect easy dinner to enjoy any night of the week.
It all begins by combining chickpeas, onion, milk, eggs, garlic, and fresh herbs in a KitchenAid® 13-Cup Food Processor and pureeing until smooth.
Next, stir to combine wet ingredients with the dry.
Pour batter into a preheated KitchenAid® Waffle Baker, close, flip, and repeat. This two-sided waffle baker is one of my favourite things in the kitchen. Bake two waffles at once which means no more waiting in line for waffles!
To finish everything off, we make a quick and simple tzatziki sauce with fresh dill and creamy yogurt.
An incredibly easy, adventurous, and healthy meal for all appetites never tasted so good.
FALAFEL WAFFLESMakes 2 waffles
For falafel waffles:
2 cans (15.5 ounces each) chickpeas, rinsed and drained
1 cup yellow onion, diced
1/3 cup extra virgin olive oil
1/4 cup milk
1 large egg
1 egg white
3 cloves garlic, peeled
2 tablespoons fresh parsley
2 tablespoons fresh cilantro
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cumin
Pinch ground cardamom
For tzatziki sauce:
1/2 cup plain yogurt
1/2 cup sour cream
2 tablespoons lemon juice
1 tablespoon fresh dill, chopped
1/4 teaspoon salt
1/3 cup cucumber, peeled and diced
Preheat a KitchenAid® Waffle Baker.
In a KitchenAid® 13-Cup Food Processor, combine chickpeas, onion, olive oil, milk, egg and egg white, garlic, parsley, and cilantro. Pulse until smooth.
In a large bowl, combine flour, baking powder, salt, cumin, and cardamom; stir.
Add the chickpea puree into the flour and stir until just combined.
Pour half of the mixture (about 1 cup) into the waffle baker, flip, and repeat on the other side. Bake for 5 minutes and 30 seconds until golden.
While the waffles are baking make the tzatziki sauce. In a bowl, combine yogurt, sour cream, lemon juice, dill, and salt; stir. Fold in cucumbers.
Serve sauce over waffles and garnish with diced cucumbers, tomatoes, and fresh dill.
