And my oldest son, who would not normally be excited about eating zucchini, loves it on pizza. The combination of green pepper, red onion, zucchini and pancetta will please everyone, you will see!

Pizza Dough

Makes three 12-14-inch pizza crusts

INGREDIENTS

3-3/4 cups all-purpose flour

3-3/4 teaspoons rapid-rise yeast

1-1/2 teaspoons sugar

3/4 teaspoon salt

3 teaspoons extra-virgin olive oil

1-1/2 cups warm water (100 – 115 degrees F)

DIRECTIONS

Place flour, yeast, sugar and salt into the bowl of your food processor. Pulse it once or twice to mix up the ingredients.

In a pourable, glass measuring cup, combine oil and water (make sure water is between 100 and 115 degrees F). Turn on food processor and slowly pour water mixture through the feed tube. Process until a ball of dough forms. Run for another minute until dough is smooth. If dough is sticky, add another tablespoon or two of flour through the feed tube while running. Dough should only be “slightly” sticky.

Form the dough into a ball and place in an oiled medium-sized mixing bowl. Cover with plastic wrap. Place in a warm spot until it doubles in size, about 45 minutes.

Take ball of dough and knead it on a cutting board sprinkled with flour for five minutes. Place back in the oiled bowl, cover and let rise again for 20-30 minutes.

You can now place the dough in a Ziploc bag and refrigerate it until the next day or you can use it immediately. When ready to use, roll the dough ball into a log and divide into three equal pieces.

Preheat oven to 450 degrees F. Spray a pizza pan with cooking spray or place your pizza stone in the oven. Place one ball of dough on a floured cutting board, pressing it flat with your palms. Use your fingertips to continue pressing the dough (which also stretches it larger) in a circular motion until you have a 12-14″ circle. Carefully place on pizza pan and fill with toppings. Repeat with other dough.

Quick Pizza Sauce

Makes nine 12-14-inch pizzas

INGREDIENTS

1 (28 oz) tomato sauce

1 (15 oz) can tomato sauce

1 (6 oz) can tomato paste

2 Tablespoons sugar

3 teaspoons fennel seed

2 teaspoons crushed garlic

2 teaspoons minced onion

2 teaspoons dried basil leaves

1 teaspoon oregano leaves

1 teaspoon table salt

1 teaspoon coarse ground pepper

DIRECTIONS

Place all ingredients in a medium sized sauce pan. Bring to a slow simmer over low heat and cook uncovered for about 45 minutes, stirring occasionally. Cool completely before using.

Sauce can be made up to two days ahead and stored in the refrigerator. Leftover sauce can be stored in the freezer up to three months.

Four Cheese Pizza

Makes one 12-14-inch pizza

INGREDIENTS

1/2 cup pizza sauce

1 cup shredded whole milk mozzarella cheese

1 cup shredded extra sharp cheddar cheese

1/4 cup crumbled Gorgonzola cheese

1/8 cup finely shredded Parmesan cheese

DIRECTIONS

Shred your mozzarella, cheddar and Parmesan cheeses in the food processor.

Spread sauce over dough, leaving a slight border. Top with all four cheeses.

Bake pizza at 450 degrees F for 12 minutes.

Pepperoni Mushroom Pizza

Makes one 12-14-inch pizza

INGREDIENTS

1 tablespoon olive oil

8 oz sliced button mushrooms

2 cups shredded whole milk mozzarella cheese

1/2 cup pizza sauce

1/2 cup mini pepperoni slices

DIRECTIONS

In a large nonstick skillet over medium heat, sauté mushrooms in oil until golden brown, about 7-9 minutes. Set aside.

Shred cheese in food processor.

Spread sauce over dough, leaving a slight border. Top with cheese, mushrooms and pepperoni.

Bake pizza at 450 degrees F for 12 minutes.

Zucchini, Green Pepper, Red Onion and Pancetta Pizza

Makes one 12-14-inch pizza

INGREDIENTS

5 oz diced pancetta

2 cups shredded whole milk mozzarella cheese

1 teaspoon olive oil

15 thinly sliced round pieces of zucchini

1/3 cup diced green pepper

1/4 cup thinly sliced red onion

1/2 cup pizza sauce

DIRECTIONS

In a large nonstick skillet over medium heat, sauté pancetta until slightly crisp, about 5 minutes. Set aside.

Prep toppings by shredding cheese, slicing zucchini and red onion and dicing green pepper all in the food processor. Rub olive oil on zucchini slices.

Spread sauce over dough, leaving a slight border. Top with cheese, zucchini, green pepper, red onion and pancetta.

Bake pizza at 450 degrees F for 12 minutes.

Hawaiian BBQ Pizza

Makes one 12-14-inch pizza

INGREDIENTS

1 1/4 cups shredded whole milk mozzarella cheese

1 cup extra sharp cheddar cheese

1 cup cubed cooked chicken

1/2 cup pineapple tidbits

1/4 cup sliced red onion

1/4 cup barbecue sauce

DIRECTIONS

Prep toppings, shred cheese and red onions in the food processor.

Spread sauce over dough, leaving a slight border. Top with cheeses, chicken, pineapple and red onion.

Bake pizza at 450 degrees F for 12 minutes
