COFFEE MARINATED PORK LOIN
Coffee is no longer just the thing that wakes you up in the morning. Nor is it only reserved for adding its signature flavour to baked goods and sweets. Today is all about adding those delightfully characteristic coffee flavours to savoury foods, specifically a lovely pork loin roast.
Coffee is complexly flavoured itself, so when added to a marinade with other flavour powerhouse ingredients the result is a roast your family will be begging for you to make again and again. Let’s roast our roasts! What better way to kick off hearty cool weather cooking than with this recipe for Coffee Marinated Pork Loin? It would be a perfect Sunday supper and the aroma of this while cooking alone is enough to bring the whole family together into the kitchen.
To tackle this recipe I’ve broken it down into steps. The pork loin must be marinated overnight, so be sure to plan out a little timeline before getting started. Also note that the cook time and rest time is about an hour total, so get started early enough in the evening. I like to prepare all the sides while the pork roasts in the oven. My absolute favourite with any pork roast is buttery mashed potatoes. You can’t beat the classics!
To get started with the most important element of the pork marinade, make a cup of strong coffee in the KitchenAid® Personal Coffee Maker. I love that the brew basket pops out so you don’t need to pull the machine out from under the cabinet plus the water tank is removable.
Just add some ground coffee and water and press ON to brew a cup of coffee. Let the coffee come to room temperature before adding to the marinade. For best results use a fresh coarse ground rich roast, such as a French roast. We want the coffee to be rich and strong because it’s the main flavour of this recipe!
Gather your marinade ingredients and simply combine them in a resealable freezer bag with a 2 1/2 pound boneless pork loin roast. All of the ingredients come together in a magically delicious way, and this pork is especially perfect for fall. Not to mention it’s so simple and easy yet impressive enough for company.
Place the pork in the fridge and let it marinate overnight, or at least 8 hours to allow all those wonderful flavours to develop. Turn the pork over at least once while marinating to distribute the marinade ingredients evenly.
When ready to cook, heat the oil in an oven-safe skillet over medium-high heat. Add the pork to the hot skillet, discarding the remaining marinade. Sear until golden brown on all sides to develop a nice flavour and exterior crust. It is so worth the extra time to sear a roast before sending it to the oven; the flavour and texture can’t be beat!
Once nicely browned all over, transfer the skillet to a 400°F oven and roast until a thermometer registers an internal temperature of 145°F, 40 to 50 minutes. Don’t forget to let rest for 10 minutes to allow the juices to redistribute before slicing and serving. Enjoy!
Coffee Marinated Pork LoinMakes 8 servings
1 cup strong coffee, at room temperature
1/4 cup maple syrup
1 tablespoon apple cider vinegar
1 tablespoon Dijon-style mustard
2 garlic cloves, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon ground ginger
1/8 teaspoon ground cinnamon
3 sprigs fresh rosemary
2 1/2 pound boneless pork loin roast
1 tablespoon olive oil
Make the coffee in a KitchenAid® Personal Coffee Maker and set aside to cool to room temperature. Once cooled, place the coffee, maple syrup, mustard, garlic, salt, pepper, ginger, cinnamon, rosemary, and pork in a 1-gallon zip top bag or other large resealable container and shake to combine. Place in the refrigerator and marinate for 8 hours, or overnight.
Preheat the oven to 400°F.
In a large ovenproof skillet, heat the oil over medium-high heat. Add the pork loin, discarding any leftover marinade, and sear until golden brown on all sides, about 2 to 3 minutes per side. Transfer the pan to the oven and roast for about 40 to 50 minutes, or until a thermometer inserted into the center of the meat registers 145°F.
Let rest for 10 minutes. Slice the pork into 1/2-inch thick pieces.
